"I don’t know that I could mark the moment when I decided to become a chef. Somehow I fell into a passion for the business. I found that I liked the hectic pace, the camaraderie and the funny off-beat type of people that work in restaurants. Although many people have a passion for food and cooking, one has to have a passion for the restaurant business itself to be successful. There are easier ways to make a living, but those of us who have restaurants in our blood can’t seem to imagine what they might be. I know it sounds sappy, but I can’t imagine doing anything else."
